Yes, in Apple land you can be reasonably sure that your ripped music is being gently mangled twice.
Can you hear that with the further ANC mangling and being outside? In the vast majority of cases no, so you shoudn't think about it.
For that reason I've historically preferred high passive isolation and either wired or non-Apple listening. I will usually have an Android with me when outside as well as the iPhones and I typically use the earphones that I have paired with said Android for especially self-hosted music... but in most cases I'm listening to podcasts on the iPhones / Airpods.
If you want to swap out those ankers tho, Sony is the way to go despite the fact that the quality codecs it supports doesn't apply to anything Apple. Though since you bought anker and your mind jumped straight to B&W/B&O from Apple, maybe you might be happier with the Max...
