have you ever had a bagel?

We are generally fond of falafel, and have a few local go-to places. What we didn't expect, or even know existed until we got some, was the green falafel. Way too much parsley/herbs. Some will like it just fine, but we are not they. The place had good gyros and pizza, but the falafel...nope. Otherwise, a nearby decent place, sadly, they wound up closing during the initial round of Covid. But, there are a number of other places we can get it. Which I would name, but it won't help you unless you are here, or wish to pay an exorbitant DoorDash fee.

Now I want to order some falafel and shawarma. Hrmm. And, maybe some bagels.

I've never had a falafel that wasn't green, at least on the inside. 🤔

I grew up with what's considered the NY-Israeli version, which has very little parsley and ground coriander instead of cilantro. I'm partial to it because its flavor profile is more aligned with my taste. As Greeks, we share many foods with the Middle East, and many versions taste a little off due to the uncanny value effect. It's a reason I don't really enjoy Turkish food, even though I believe everyone who tells me it's delicious.

This is a good approximation of what I think the recipe is, and as a bonus, there are a few variations at the end.

'Cilantro' is the Spanish word for the Coriander plant. Because cilantro is used so much in Mexican cooking and Mexican food has such a large presence in American diets we have adopted an odd split where we refer to the plant as either coriander or cilantro, the leaves themselves as cilantro exclusively and the seeds as coriander exclusively.
